Zucchini boats

These are delicious and easy to make. We have them as a staple at our house. You can use beef, turkey ,chicken or tofu. You can also substitute the cheese with Daiya or nutritional yeast or just leave it out





5 medium size zucchini 

1 lb ground meat or tofu

1 jar of tomato sauce any kind you like (or if you have time you can make your own).

1/2 ball of mozzarella grated

1 tub of baby spinach (optional)

1 onion diced

2 cloves of garlic

1/2 tsp salt

1/2 tsp oregano

1/4 to 1/2 tsp chili flakes

Fresh ground pepper


Preheat oven to 350


In a cast iron skillet sauté onions and garlic until translucent add spinach and cook until wilted. Add ground meat and continue to cook until meat is browned. Add spices and tomato sauce (reserving a bit for the bottom of your baking dish)cooking until warmed through. Remove from heat and set aside. Using a long glass or ceramic cooking dish, spread the bottom with a bit of the left over tomato sauce. 


Slice zucchini lengthwise, scoop out the middle and place them in the baking dish. Fill the boats with the mixture (if there is left over filling you can spread it around for a meatier dish or freeze it for another time). 

Top with grated mozzarella and fresh cracked pepper. Place in the oven on the middle rack and bake for 20 minutes. 



Remove from oven and serve with green salad, oven baked fries or sweet potato fries.
