Cauliflower Calzone

These are a staple in our house, my husband can't get enough of them. You can put anything inside but we like to keep it simple with just sauce and cheese.


1 head of Cauliflower

1/2 cup mozzarella cheese

1/4 cup parmesan

1 egg

1 tsp oregano dried

Fresh cracked pepper to taste

Tomato sauce

3 oz of tomato paste (1/2 a can)

2 tbsp of parmesan

2 cloves of garlic minced fine

1 tsp honey

1 tsp lemon

1/2 tsp each of onion powder, oregano, basil, red chilli flakes

Fresh ground pepper to taste.

You can do this two ways:

Rice your cauliflower florets in a blender and then microwave it for 10 minutes. Let cool in a cotton tea towel and squeeze all the water out.


Break cauliflower into florets and steam for 8 to 10 minutes or until very soft but not mushy. Let cool on a tea towel and squeeze the water out.

The mixture should be very dry, about 1 cup of water should come out. Make sure and allow the cauliflower to cool completely or you will burn your hands.

Add the rest of the ingredients and on parchment form 2 round disks and bake in the oven at 450 for 10 minutes.

While your calzone is baking mix all ingredients of the sauce together adding water till you get the consistency you like. (we don't add any but we like a thick sauce).

Remove from oven and add sauce and toppings to one of the discs. Carefully flip the naked disc onto the one with the toppings, pressing the edges all around to close it up. You can use wet fingers to do this and bake for another 10 minutes.

Cut it in half and serve with a green salad, caesar salad or baked home fries and garnish with chopped parsley.
